Earl Grey Ice Cream
INGREDIENTS
- 3 c milk
- 1 vanilla bean
- 4 Earl Grey tea bags
- 3/4 c sugar
- 12 egg yolks
- another 3/4 c sugar
- 2 1/2 c cream
PREPARATION
- Split the vanilla bean and scrape the seeds into a heavy pot.
- Put the milk and 3/4 c sugar in the pot and bring to a scald.
- Add tea bags and steep 20 minutes.
- Using a mixer, combine yolks and the other 3/4 c sugar and mix at medium until yolks are stiffened and are pale yellow.
- On low, gradually add about 1 c of the hot milk mixture.
- Add yolk mixture to the pot and cook over medium low until just thickened and coats the back of a wooden spoon.
- Strain through a fine strainer and put the teabags back in. Chill overnight.
- Stir in cream and freeze in ice cream maker.
