---++ Earl Grey Ice Cream ---+++ INGREDIENTS * 3 c milk * 1 vanilla bean * 4 Earl Grey tea bags * 3/4 c sugar * 12 egg yolks * another 3/4 c sugar * 2 1/2 c cream ---+++ PREPARATION 1. Split the vanilla bean and scrape the seeds into a heavy pot. 1. Put the milk and 3/4 c sugar in the pot and bring to a scald. 1. Add tea bags and steep 20 minutes. 1. Using a mixer, combine yolks and the other 3/4 c sugar and mix at medium until yolks are stiffened and are pale yellow. 1. On low, gradually add about 1 c of the hot milk mixture. 1. Add yolk mixture to the pot and cook over medium low until just thickened and coats the back of a wooden spoon. 1. Strain through a fine strainer and put the teabags back in. Chill overnight. 1.
