English Porridge

INGREDIENTS

  • 1.5 c milk
  • 1.5 c water
  • 1.5 tsp flake salt (less if using grain salt)
  • 1/2 c old fashioned oats
  • 1/2 c steel cut oats * 2 Tbsp sugar or maple syrup

PREPARATION

  1. Put milk, water and salt in a saucepan and heat over high.
  2. As soon as it simmers, add both oats and lower heat to medium.
  3. Cook at a simmer for 20 minutes. The steel cut oats should be just tender and pop when you bite them and the old fashioned oats should be creamy.
  4. Turn off the heat. Add the sugar or syrup to taste. Put into serving bowls.
  5. Optionally, add milk and sugar.
