---++ Fish Bake with Tomato Bacon Avocado Salsa
---+++ INGREDIENTS
---++++ Fish
   * 1 c baking mix
   * 1 tsp salt
   * 1 5sp smoked paprika
   * 1/8 tsp chipotle powder
   * 1/2 tsp lemon pepper
   * 1/2 c evaporated milk
   * 4 tilapia fillets
   * cooking spray
----++++ Salsa
   * 4 slices bacon, diced, cooked, drained
   * 2 avocados, chopped
   * 2 large tomatoes, seeded, diced
   * 1/3 c chopped red onion
   * 1/4 c chopped parsley
   * 2 Tbsp lime juice
   * 1/2 tsp salt
   * 1/4 tsp pepper
---+++ PREPARATION 
   1. Heat oven to 400
   1. Spray baking sheet with cooking spray
   1. In shallow dish, mix baking mix, salt, paprika, chipotle powder, and lemon pepper.
   1. Put evaporated milk in another shallow dish
   1. Dip fillets in milk, then coat with seasoned mix.
   1. Place on baking dish and spray top of fish with cooking spray to moisten
   1. Bake, uncovered, 15-20 minutes.
   1. In large bowl, mix salsa ingredients.  Let stand 15 minutes.
   1. Stir salsa and adjust seasoning.
   1. Top baked fish with salsa.
