---++ foo Velvet Cake ---+++ INGREDIENTS ---++++ Cake * solid shortening * flour for dusting the pan (could try Baker's Joy) * Yellow cake mix (plain, no pudding) * 2-1/2 Tbsp cocoa powder * 1-1/3 c buttermilk * 1 bottle (1 oz) food coloring * 1 stick butter, melted * 3 large eggs * 1 tsp vanilla * 1 tsp baking soda * 1 Tbsp white vinegar ---++++ Cream Cheese Frosting * 8 oz pkg cream cheese, room temperature * 1 stick butter, room temperature * 1 tsp vanilla * 4 c sifted confectioner's sugar ---+++ PREPARATION 1 Make the cake: place a rack in the center of the oven and preheat to 350. Lightly grease then flour cake pan. Shake out excess flour and set pans aside. 2 Place the cake mix, cocoa powder, buttermilk, food coloring, melted butter, eggs, 1 tsp of vanilla and the baking soda and vinegar in a large mixing bowl and beat with an electric mixer on low speed till the ingredients are incorporated, about 1 minute. Stop the machine and scrape down the side of the bowl with a spoonula. Beat for 2 minutes on medium, scraping the side again if needed.The batter should look well blended. Pour batter into pan and smooth the top with the spoonula. Place in the oven. 3 Bake for the time directed on the pakage -- the cake should slightly pull away from the edges and spring back when lightly touched. Let cool 4 Make the cream cheese frosting: Place thee cream cheese and butter in a large mixing bowl and beat with an electric mixer on high speed until light and fluffy, 1 to 2 minutes. Stop and scrape down the side with a spoonula. Add the teaspoon of vanilla and the confectioners sugar and beat on medium until well combined.
