French Onion Meatloaf
Ingredients
- 2 lbs ground beef
- 1/4 cup grated onion
- 2 c stuffing mix (about 4oz)
- 1 can (10.5 oz) French onion soup
- 2 eggs, lightly beaten
- 1 1/2 tsp dried thyme
- 1/2 tsp pepper
- 1 c. shredded Swiss or Gruyere cheese
- 1/4 c grated Parmesan cheese
- 1 can crispy fried onions
Preparation
- Preheat oven to 350
- In a large bowl, mix together beef, grated onion, stuffing mix, soup, eggs, thyme and pepper until well combined. Form into a loaf and transfer into the loaf pan.
- Bake for 45 minutes
- Remove meatloaf and top with shredded cheese, Parmesan and crispy onions. Return to oven and bake 15 minutes more.
- Remove to cooling rack, lift meatloaf from pan, transfer to a patter and rest 10 minutes before serving.
