Garlic Cheddar Chicken Bake
INGREDIENTS
- 2 Tbsp melted butter
- 1/2 c panko
- 1 lb chicken tenders, cut into bite-sized pieces
- 1 c uncooked long grain rice
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 2.5 c chicken stock
- 2 c shredded cheddar
PREPARATION
- Heat oven to 400.
- Spray 8" square pan with cooking spray
- In small bowl, combine butter and panko
- In baking dish, mix chicken, rice, salt, pepper, garlic powder, stock, and 1.5 c of the cheese.
- Bake 45-50 minutes, until rice is tender and most of the liquid is absorbed.
- Sprinkle 1/2 c cheese and panko mixture evenly over rice mixture.
- Bake about 5 minutes, or until crumbs are light golden brown
