Gazpacho Verde
INGREDIENTS
- 3 c fresh baby spinach
- 2 ripe avocados
- 1 English cucumber
- 3 stalks celery, cut into 1" pieces
- 1 c ice cubes
- 1 c cold water
- 1/2 c green salsa
- 1/4 c lime juice
- salt & pepper to taste
PREPARATION
- In a food processor, combine everything.
- Cover and process until smooth.
- Chill 5- 10 minutes for flavors to combine.
