---++ Greek Meatloaf ---+++ INGREDIENTS * 1 Tbsp oil * 1 onion, chopped * 2 cloves garlic, chopped * 2 eggs, divided * 2 lbs ground pork * 1 1/3 c quick-cooking oats * 1/3 c Greek dressing * 3 Tbsp chopped parsley * 1 tsp oregano * 1/2 tsp pepper * 2 c tightly-packed spinach, chopped * 1 pkg (4 oz) crumbled feta * 1/2 c shredded Mozzarella ---+++ PREPARATION 1. Heat oven to 375; spray 13" x 9" pan with cooking spray. 1. Heat oil in medium skillet on medium heat. 1. Add onions, cook 5-6 minutes 1. Add garlic, cook 1 minute longer; remove from heat. 1. Beat 1 egg in large bowl. 1. Add meat, oats, dressing, parsley, oregano, pepper and onion mixture. 1. Mix until just blended. 1. Shape 2/3 into shallow loaf in 13" x 9" pan. 1. Make an indentation in the center by pressing down. 1. Beat remaining egg in medium bowl. 1. Add spinach and feta; mix well. 1. Spoon into indentation in meat. 1. Cover with remaining meat and press edges together to seal. 1. Top with Mozzarella. 1. Cover with foil and bake for 1 hour or until 140. Uncover and bake till 160. 1.
