---++ Guinness & Cheddar Mac & Cheese ---+++ INGREDIENTS ---++++ Topping * 1 Tbsp butter * 2 tsp garlic * 1/2 c panko * 1/2 tsp parsley flakes ---++++ Mac & Cheese * 1 lb macaroni * 2 Tbsp butter * 2 Tbsp flour * 2/3 c Guinness * 1.5 c milk * 1/2 c half-and-half * 1/2 tsp salt * 1/4 tsp pepper * 1 Tbsp dijon mustard * 2 oz cream cheese, cut into pieces * 3.5 c grated sharp cheddar ( 14 oz ) ---+++ PREPARATION ---++++ Topping 1. In medium skillet on medium-low, melt butter. 1. Add garlic, panko, and parsley flakes. 1. Cook until the panko is lightly toasted and mixture is fragrant. 1. Remove from heat; add salt and pepper to taste. Set aside. ---+++ Mac & Cheese 1. Cook macaroni till just al dente. Reserve a cup of cooking water and drain. 1. In red & white pot, melt butter on medium. Sprinkle in flour. 1. Whisk for one minute. 1. While whisking, pour in Guinness, milk, half-and-half, salt, pepper, and mustard. 1. Bring to a simmer and cook until it thickens slightly, whisking frequently. 1. Add cream cheese and 2.5 cups of cheddar, stir/whisk until completely smooth. 1. Add pasta and stir to combine. 1.
