Guinness French Onion Soup
INGREDIENTS
- 8 c sliced onion (4-6)
- 5 garlic cloves, minced
- 2 Tbsp butter
- 6 c (3.foo cans) beef broth
- 1/2 c Guinness
- 1 Tbsp soy sauce
- 1 bay leaf
- 1 tsp red wine vinegar *1/4 tsp rosemary
- 1/4 tsp thyme
- salt & pepper to taste
PREPARATION
- Place onions, garlic and butter in slow cooker.
- Cook on HIGH 45 minutes to an hour--until onions are slightly softened.
- Add remaining ingredients except salt & pepper.
- Cook on LOW 8 hours.
- Remove bay leaf.
- If desired, serve with croutons and cheese.
