---++ Ham and Cheese Quiche

*Ingredients*
| 1 | unbaked pie crust |
| 2 Tbsp | flour |
| 3/4 tsp | salt |
| 3 | eggs |
| 1 c | half & half |
| 2 to 4 slices | Swiss cheese |
| 1/2 c | chopped fresh spinach, packed |
| 1 4oz can | mushrooms, drained |
| 1 c | diced ham |

Preheat oven to 350.

In a medium bowl, beat together flour, salt, eggs and half & half.  Place pie crust in pie plate and cover the bottom with swiss cheese.  sprinkle spinach evenly over cheese.  Cover spinach with mushrooms.  Pour egg mixture over mushrooms.  Coveer with ham.  Bake for 40-45 minutes until knife inserted near center is clean.

May sprinkle with cheddar cheese before baking.
