---++ Hoppin' John ---+++ Ingredients | 2 tsp | EVOO | 1 tsp | | 1 | large onion, chopped | 1/2 | | 6 oz | chopped ham | 3 oz | | 2 cloves | garlic, minced | 1 clove | | 4 c | veggie broth | 2 c | | 1 tsp | worcestershire sauce | 1/2 tsp | | 1/4 tsp | dried basil | 1/8 tsp | | 1/4 tsp | black pepper | 1/8 tsp | | 1 1/2 c | long grain white rice | 3/4 c | | 2 cans | blackeyed peas | 1 can | | 1 can | diced tomatos | 1/2 can | <br /><br /> ---+++ Preparation 1 Heat oil on medium. Add chopped onion, cook 2 minutes. Add ham and garlic. Cook, stirring for 1 minute. 1 Add broth, raise heat to high. Add 1/2 (1/4) c water. Stir in Worcestershire sauce, pepper and basil. Bring to a boil 1 Add rice, stir and reduce heat to low. Cover and simmer till rice is tender, about 20 minutes. 1 While rice cooks, drain and rinse blackeyed peas; set aside. 1 When rice is done, add peas and tomatoes with juice.
