---++ Hoppin' John ---+++ Ingredients * 2 tsp EVOO * 1 large onion * 6 oz chopped ham * 2 cloves minced garlic * 2 cans veggie broth or 1 box * 1 tsp Worcestershire sauce * 1/4 tsp dried basil * 1/4 tsp black pepper * 1 1/2 c long grain rice * 2 15oz cans blackeyed peas (2 cups) * 1 can 14.5oz diced tomatoes ---+++ Preparation 1 Heat oil on medium. Add chopped onion, cook 2 minutes. Add ham and garlic. Cook, stirring for 1 minute. 2 Add broth, raise heat to high. Add 1/2 c water. Stir in Worcestershire sauce, pepper and basil. Bring to a boil 3 Add rice, stir and reduce heat to low. Cover and simmer till rice is tender, about 20 minutes. 4 While rice cooks, drain and rinse blackeyed peas; set aside. 5 When rice is done, add peas and tomatoes with juice.
