---++ Italian Chicken Bake ---+++ INGREDIENTS * 8 chicken thighs * 2 cans Italian-style diced tomatoes * 1/2 c pesto * 2 c shredded Mozzarella cheese * 2 Tbsp herb and cheese blend ---+++ PREPARATION 1 Heat oven to 450 (original calls for 400) 1 Pour cans of tomatoes into 13" x 9" pan and spread evenly 1 Place chicken thighs, skin-side up, on tomatoes. 1 Drop about 1 Tbsp pesto on each thigh, then when they're all dropped, spread with the back of a spoon. 1 Bake 50-55 minutes until chicken is cooked through. 1 Top with shredded mozzarella and sprinkle with herb and cheese blend and return to the oven and bake 5 minutes or until cheese melts.
