Japanese Cabbage Stew
INGREDIENTS
- 6 c coleslaw mix
- 1.25 lbs ground pork
- 1 c fresh spinach, chopped
- 1 large or two small red bell peppers, chopped
- 1 onion, chopped
- 1 stalk celery, chopped
- 2 scallions, chopped
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp red miso
- 4 c chicken broth
- 1/4 c soy sauce
- 3 Tbsp tomato paste
- 2 Tbsp sake or cream sherry
- 1 Tbsp rice vinegar
- 1 tsp thyme, mortared
PREPARATION
- Use crock liner.
- In a large bowl, combine coleslaw, ground pork, spinach, pepper, onlon, celery, scallion, salt pepper and miso.
- Place in crock.
- In a medium bowl, whisk broth, soy sauce, tomato paste, sake, vinegar and thyme.
- Pour over pork mixture in crock; stir to combine.
- Cover and cook on LOW for 6 hours.
