---++ Japanese Cabbage Stew ---+++ INGREDIENTS * 6 c coleslaw mix * 1.25 lbs ground pork * 1 c fresh spinach, chopped * 1 large or two small red bell peppers, chopped * 1 onion, chopped * 1 stalk celery, chopped * 2 scallions, chopped * 1/2 tsp salt * 1/4 tsp pepper * 2 Tbsp red miso * 4 c chicken broth * 1/4 c soy sauce * 3 Tbsp tomato paste * 2 Tbsp sake or cream sherry * 1 Tbsp rice vinegar * 1 tsp thyme, mortared ---+++ PREPARATION 1. Use crock liner. 1. In a large bowl, combine coleslaw, ground pork, spinach, pepper, onlon, celery, scallion, salt pepper and miso. 1. Place in crock. 1. In a medium bowl, whisk broth, soy sauce, tomato paste, sake, vinegar and thyme. 1. Pour over pork mixture in crock; stir to combine. 1. Cover and cook on LOW for 6 hours.
