Jerk Pork with Caribbean Salsa
INGREDIENTS
Pork
- 3 lb boneless pork roast or loin
- 6 cloves garlic, crushed
- 2 Tbsp mild jerk seasoning
- 1/2 tsp kosher salt
- 1 lime, squeezed
- 1/2 c orange juice
Salsa
- 1 avocado, diced
- 2 mangos, peeled, seeded and coarsely chopped
- 1 1/2 Tbsp chopped red onion
- 2 Tbsp chopped fresh parsley
- 2-3 Tbsp lime juice
- salt and pepper to taste
PREPARATION
- Cut slits in pork with sharp knife and stuff with half the garlic.
- COmbine remaining garlic with seasoning and salt; wearing gloves, rub over pork.
- Put in gallon zipper bag and add juices.
- Marinate overnight, turning occasionally.
- Put everything in crock and cook on LOW for 9 hours.
- Remove pork and shred.
- Remove and reserve liquid; return pork and 1 c liquid to crock.
- Cook 15 minutes.
- Make Salsa: Combine ingredients in bowl, refrigerate until ready to serve.
