---++ Jerk Pork with Caribbean Salsa ---+++ INGREDIENTS ---+++ Pork * 3 lb boneless pork roast or loin * 6 cloves garlic, crushed * 2 Tbsp mild jerk seasoning * 1/2 tsp kosher salt * 1 lime, squeezed * 1/2 c orange juice ---+++ Salsa * 1 avocado, diced * 2 mangos, peeled, seeded and coarsely chopped * 1 1/2 Tbsp chopped red onion * 2 Tbsp chopped fresh parsley * 2-3 Tbsp lime juice * salt and pepper to taste ---+++ PREPARATION 1. Cut slits in pork with sharp knife and stuff with half the garlic. 1. COmbine remaining garlic with seasoning and salt; wearing gloves, rub over pork. 1. Put in gallon zipper bag and add juices. 1. Marinate overnight, turning occasionally. 1. Put everything in crock and cook on LOW for 9 hours. 1. Remove pork and shred. 1. Remove and reserve liquid; return pork and 1 c liquid to crock. 1.
