Kalua Pork
INGREDIENTS
- 3 lb pork roast
- kosher or coarse sea salt
- 1 Tbsp liquid Mesquite smoke
PREPARATION
- Put roast in crock.
- Pierce all over with a knife.
- Rub with salt, then liquid smoke.
- Cook about 16 hours.
- Remove to platter and shred.
- Discard all juice except that needed to keep pork moist.
