---++ Lemon Bars ---+++ INGREDIENTS ---++++ Base * 2 c (250g) sifted flour * 1/2 c (100g) granulated sugar * 1 c (2 sticks) butter, softened ---++++ Top * 4 eggs, beaten * 2 c (400g) granulated sugar * 1/3 c lemon juice * 1/4 c (31g) flour * 1/2 tsp baking powder * 1/2 tsp lemon zest * powdered sugar to sprinkle ---+++ PREPARATION 1 Heat oven to 375 1 Mix the butter into the flour and sugar with your hands until it clings together 1 Press into 13" x 9" pan. 1 Bake for 20-25 minutes, until lightly browned. 1 For the filling, beat together eggs, sugar, lemon juice, and zest. 1 Whisk together flour and baking powder. 1 Stir into egg mixture. 1 Pour over baked and cooled crust. 1 Bake at 375 for 25 minutes. 1 Cool and sprinkle with powdered sugar. 1 Cut into 12 bars.
