Lemon Basil Butter Chicken
INGREDIENTS
- 1.5 c stock or broth
- 3 Tbsp lemon juice
- 1 tsp basil
- 3 Tbsp cornstarch
- 2 Tbsp butter
- 8 chicken thighs
- salt and pepper
- 2 cloves garlic, minced
PREPARATION
- Heat oven to 425.
- In 2 c glass measure, whisk broth, lemon juice, basil, and cornstarch until will blended.
- Melt 1 Tbsp butter in lodge skillet, over medium-high heat.
- Sprinkle chicken with salt and pepper.
- Cook chicken 5-10 minutes, turning once, until brown. Transfer to plate.
- Reduce heat to medium-low. In same skillet, melt remaining butter.
- Stir in broth mixture and garlic; cook 3-5 minutes or until slightly thickened.
- Return chicken to skillet.
- Bake, uncovered, 15-20 minutes or until 165.
