Lemon-Spinach Chicken Soup
INGREDIENTS
- 6 Cups baby spinach
- 3/4 Pound cooked chicken breast
- 6 Cups chicken broth
- 1/3 Cup heavy cream
- 3 Tablespoons lemon juice
- salt and pepper to taste
PREPARATION
- Chop spinach and chop or shred chicken.
- In soup pot combine broth, chicken and spinach.
- Heat on medium-high until boiling and spinach is wilted.
- Add cream and heat another 3 minutes.
- Season with lemon juice, salt and pepper.
