Lime Couscous with Summer Veggies
INGREDIENTS
- 10 oz pkg couscous
- 1 tsp EVOO
- 4 carrots, chopped
- 2 zucchini or yellow squash, mooned
- 6 scallions in 1" pieces
- 1/2 c lime juice
- 1/4 c EVOO
- 1 Tbsp honey
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 c chopped walnuts, toasted
- 2 ozs shaved Parmesan
PREPARATION
- Prepare couscous as directed
- In mondo skillet, cook and stir carrots in hot oil for 2 minutes.
- Add zucchini and scallions; cook 6 minutes.
- Transfer couscous to a large bowl, fluff with fork. Add carrot mixture.
- In small mason jar, combine lime juice, honey, salt and pepper,
- Cover and shake to combine. Pour over couscous mixure.
- Toss to mix. Top with walnuts and cheese.
