Madrid Pork Chops
INGREDIENTS
- 2 cloves garlic, minced
- 4 springs parsley, chopped
- 1 medium onion, chopped
- 1 Tbsp Spanish paprika
- 5 Tbsp EVOO
- 4 pork chops
- salt and pepper to taste
PREPARATION
- Heat oven to 450
- In mixing bowl, combine garlic, parsley, and onion.
- Season with salt, pepper, and paprika.
- Add 3 Tbsp EVOO.
- Grease a roasting pan or line with foil
- Season the pork chops with the mixture and place in the prepared pan.
- Place remaining mixture between chops.
- Bake for 15 minutes.
- Turn chops over, piling onion mixture on top and bake another 15-20 minutes until done.
