Mahogany Chicken Thighs
INGREDIENTS
- 1/3 c pineapple juice
- 1/4 c soy sauce
- 3 Tbsp potato starch
- 3 Tbsp balsamic vinegar
- 2 Tbsp cider vinegar
- 2 Tbsp tomato paste
- 1 Tbsp honey
- 1 Tbsp jar garlic
- 1 tsp ground ginger
- 1/4 tsp cayenne
- 1 onion, sliced into wedges
- 2 carrots, peeled and sliced
- 8 chicken thighs
- 3 scallions, sliced (garnish)
PREPARATION
- Combine juice, soy sauce, potato starch, vinegars, tomato paste, honey, ginger, garlic and cayenne, set aside
- Place onion in slow cooker; add chicken, then carrots.
- Pour sauce evenly on top.
- Cover, cook on LOW for 6 hours.
- Serve with rice.
