Mediterranean Pomegranate Stir-Fry
INGREDIENTS
- 2 boneless, skinless chicken breasts, cubed
- 1 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp paprika
- 1 Tbsp EVOO
- 2 carrots, thinly sliced
- 1 onion, stringed
- 1/4 c pomegranate seeds
PREPARATION
- In a bowl, toss chicken with cumin, coriander, and paprika.
- Heat oil over medium-high.
- Add carrots and onions; cook, stirring, 2 minutes.
- Add chicken; cook, stirring, 5 minutes.
- Add pomegranate seeds, cook 1-2 minutes more.
- Add a splash of water to reach desired sauciness.
- Serve over rice.
