Mediterranean Skillet Chicken
INGREDIENTS
- 2 breasts
- 2 Tbsp EVOO
- 1 small or 1/2 large onion, chopped
- 3 garlic cloves, minced
- 3 tomatoes, chopped
- 2 zucchini, chopped
- 1/4 c sliced green olives
- 2 Tbsp capers
- 1/2 c shredded Parmesan cheese
PREPARATION
- Cut chicken into pieces. Add oil to large skillet and heat on medium.
- Add chicken to skillet and season with salt and pepper.
- Cook 6-8 minutes until no longer pink inside.
- Remove from skillet.
- Add onion and cook until soft.
- Add garlic and cook 30 seconds.
- Add tomatoes, zucchini, olives, and capers.
- Add a splash of water if skillet seems dry.
- Cook 10-12 minutes until thickened.
- Return chicken to pan until heated through.
- Season with salt and pepper to taste; sprinkle with cheese.
