Mediterranean Style Chicken & Pasta
INGREDIENTS
- 6 oz multigrain pasta
- 2 tsp EVOO
- 1/2 onion chopped
- 2 zucchini in 1/4" moons
- 2 cloves garlic, minced
- 2 c cooked chicken cut into bite-sized pieces
- 1 can diced tomatoes
- 1 8-oz can tomato sauce
- 1/2 tsp oregano
- 1 tsp basil
- 1/4 c kalamatas, quartered lengthwise
- 3/4 c crumbled feta (3 oz)
PREPARATION
- In red pot, cook pasta, drain, return to pot.
- In mondo skillet, heat oil over medium.
- Add onion, cook 3-4 minutes, until crisp-tender.
- Add zucchini and garlic, cook 2 minutes
- Stir in chicken, tomatoes, sauce, oregano, and basil.
- Reduce heat and simmer 5-7 minutes, stirring occasionally.
- Stir in olives.
- Pour chicken mixture over pasta; top with feta. Toss to coat.
