---++ Mediterranean Style Chicken & Pasta ---+++ INGREDIENTS * 6 oz multigrain pasta * 2 tsp EVOO * 1/2 onion chopped * 2 zucchini in 1/4" moons * 2 cloves garlic, minced * 2 c cooked chicken cut into bite-sized pieces * 1 can diced tomatoes * 1 8-oz can tomato sauce * 1/2 tsp oregano * 1 tsp basil * 1/4 c kalamatas, quartered lengthwise * 3/4 c crumbled feta (3 oz) ---+++ PREPARATION 1. In red pot, cook pasta, drain, return to pot. 1. In mondo skillet, heat oil over medium. 1. Add onion, cook 3-4 minutes, until crisp-tender. 1. Add zucchini and garlic, cook 2 minutes 1. Stir in chicken, tomatoes, sauce, oregano, and basil. 1. Reduce heat and simmer 5-7 minutes, stirring occasionally. 1. Stir in olives. 1. Pour chicken mixture over pasta; top with feta. Toss to coat.
