---++ Mexican Chicken Casserole ---+++ INGREDIENTS * 2 chicken breasts * 1/2 tsp garlic * 1/2 c chicken stock * 1 can Ro-Tel, drained * 2 oz cream cheese * 2 c shredded Jack or Co-Jack cheese ---+++ PREPARATION 1. Preheat oven to 375. 1. Cook chicken breasts and garlic in stock in skillet on medium until chicken is done. 1. Shred chicken into 13" x 9" pan, discarding stock. 1. Mix in drained Ro-Tel. 1.
