Moo Shu Chicken
INGREDIENTS
- 1/2 c hoisin sauce
- 2 Tbsp water
- 4 tsp toasted sesame oil
- 1 Tbsp cornstarch
- 1 Tbsp soy sauce
- 3 cloves garlic, minced
- 1 bag coleslaw mix
- 1 c carrot shreds
- 4 boneless skinless thighs
- 8" flour tortillas
- scallions
PREPARATION
- In a small bowl, combine hoisin, water, sesame oil, cornstarch, soy sauce, and garlic; set aside.
- In medium slow cooker, combine coleslaw mix and carrots.
- Slice chicken into 1/8" slices, then cut slices in half lengthwise.
- Place on top of cabbage mixture in crock.
- Drizzle with 1/4 cup of the hoisin mixture.
- Cover and cook on low for 6 hours.
- Stir in remaining hoisin mixture.
- Heat tortillas as directed on package.
- Spoon mixture onto tortillas; top with scallions if desired.
