Mozzarella Meatballs
INGREDIENTS
- 2 lb chuck or leaner
- 1/2 c Italian bread crumbs
- 1/4 c grated Parmesan
- 1 tsp salt
- 1 tsp mortared basil
- 1/4 tsp pepper
- 1 tsp Worcestershire sauce
- 2 cloves garlic
- 2 eggs
- 8 oz small mozzarella fresca balls
- 3 Tbsp EVOO
- 2 jars pasta sauce
- pasta or spaghetti squash
PREPARATION
- In large bowl, combine beef, crumbs, Parmesan, salt, basil, pepper, Worcestershire, garlic, and eggs.
- Shape around mozzarella to form meatballs, sealing in cheese.
- In mondo skillet, heat oil on medium-high.
- Add meatballs, cook till brown on all sides.
- Pour one jar of sauce into crock.
- Carefully place meatballs in crock.
- Pour second jar of sauce over meatballs.
- Cover, cook on LOW 6 hours.
- Serve with pasta or spaghetti squash.
