North Woods Wild Rice Soup
INGREDIENTS
- 2 tsp vegetable oil
- 1 onion, chopped
- 2 ribs celery, diced
- 2 medium carrots, diced
- 6 oz smoked turkey, diced
- 1/2 c uncooked wild rice
- 1 tsp tarragon
- 1/4 tsp pepper
- 3.5 c chicken broth
- 1 can evaporated milk
- 1/3 c flour
- 1 c frozen peas, thawed
- 2 Tbsp sherry
PREPARATION
- In medium skillet, heat oil, and cook onion 4 minutes
- Place onion, celery, carrots, turckey, rice, tarragon, and pepper in slow cooker.
- Pour broth over.
- Cover and cook on LOW 6-7 hours.
- Stir in peas for last 15 minutes.
- Mix milk and flour. Stir into soup.
- Cook 20 minutes until thickened.
