---++ One Pot Parmesan Chicken Ziti with Artichokes and Spinach ---+++ INGREDIENTS * 4 c water * 2 cans evaporated milk * 1 tsp salt * 2 cloves garlic, chopped * 1 lb ziti * 2 tsp cornstarch * 2 c shredded chicken * 1 can artichoke hearts, drained, coarsely chopped * 6 oz shredded parmesan * 2/3 c lemon juice * 2 Tbsp butter * 5 oz package baby spinach ---+++ PREPARATION 1 In white pot, heat water, 1 can of evaporated milk, salt, garlic and past to simmer. 1 Simmer 12-14 minutes, until tender. 1 In medium bowl, beat remaining can of milk and the cornstarch; stir in chicken and artichokes. 1 Add to mixture in pot; return to simmer. 1 Simmer 1-3 minutes, until thickened. 1 Remove from heat. Stir in half the cheese and the lemon juice until cheese melts. 1 Add remaining cheese and butter, stir again. 1 Add spinach, stir until wilted.
