One Pot Parmesan Chicken Ziti with Artichokes and Spinach

INGREDIENTS

  • 4 c water
  • 2 cans evaporated milk
  • 1 tsp salt
  • 2 cloves garlic, chopped
  • 1 lb ziti
  • 2 tsp cornstarch
  • 2 c shredded chicken
  • 1 can artichoke hearts, drained, coarsely chopped
  • 6 oz shredded parmesan
  • 2/3 c lemon juice
  • 2 Tbsp butter
  • 5 oz package baby spinach

PREPARATION

  1. In white pot, heat water, 1 can of evaporated milk, salt, garlic and past to simmer.
  2. Simmer 12-145 minutes, until tender.
  3. In medium bowl, beat remaining can of milk and the cornstarch; stir in chicken and artichokes.
  4. Add to mixture in pot; return to simmer.
  5. Simmer 1-3 minutes, until thickened.
  6. Remove from heat. Stir in half the cheese and the lemon juice until cheese melts.
  7. Add remaining cheese and butter, stir again.
  8. Add spinach, stir until wilted.
