One Pot Parmesan Chicken Ziti with Artichokes and Spinach
INGREDIENTS
- 4 c water
- 2 cans evaporated milk
- 1 tsp salt
- 2 cloves garlic, chopped
- 1 lb ziti
- 2 tsp cornstarch
- 2 c shredded chicken
- 1 can artichoke hearts, drained, coarsely chopped
- 6 oz shredded parmesan
- 2/3 c lemon juice
- 2 Tbsp butter
- 5 oz package baby spinach
PREPARATION
- In white pot, heat water, 1 can of evaporated milk, salt, garlic and past to simmer.
- Simmer 12-145 minutes, until tender.
- In medium bowl, beat remaining can of milk and the cornstarch; stir in chicken and artichokes.
- Add to mixture in pot; return to simmer.
- Simmer 1-3 minutes, until thickened.
- Remove from heat. Stir in half the cheese and the lemon juice until cheese melts.
- Add remaining cheese and butter, stir again.
- Add spinach, stir until wilted.
