Orange Curry Chicke
INGREDIENTS
- 1 c frozen orange juice concentrate
- 2/3 c + 2 Tbsp water
- 2 Tbsp curry powder
- 2 tsp salt
- 1 onion, minced
- 4 tsp jar garlic
- 2 Tbsp oil
- 2 Tbsp cornstarch
- 2 c cooked chicken, cubed
- 2 packages broccoli, cooked.
PREPARATION
- In the red pot, over medium heat, combine orange juice, 2/3 c water, curry powder, salt, onion garlic and oil.
- In a measuring cup, combine cornstarch and 2Tbsp water.
- Whisk slurry into the orange juice mixture; continue whisking until thickened.
- Remove sauce from heat -- heat chicken and broccoli, toss with sauce and serve.
