Orange Sesame Chicken
INGREDIENTS
Sauce
- 1/3 c orange juice
- 1/4 c chicken broth
- 2 Tbsp soy sauce
- 2 packets Splenda
- 1 Tbsp rice wine
- 1/2 tsp Sriracha or to taste
- 1 Tbsp rice vinegar
- 1/4 tsp white pepper
- 2 tsp cornstarch
Chicken
- 2 breasts, cubed
- kosher salt
- 1 1/2 Tbsp cornstarch
- 1 Tbsp sesame oil
- 4 cloves garlic
- 1 inch grated ginger
- 1 tsp orange zest
- sliced scallions and sesame seed for garnish
PREPARATION
- Mix sauce ingredients, set aside.
- Lightly salt chicken and coat with cornstarch, set aside.
- Heat mondo skillet on high. Add 1 tsp sesame oil and half the chicken.
- Cook 2-3 minutes/side or until browned; remove and set aside.
- Repeat with other half of chicken.
- Add 1 tsp sesame oil and stir-fry garlic and ginger until fragrant, about 1 minute. Add orange zest, then chicken.
- Stir chicken, then add sauce and cook until sauce is thickened, about 1-2 minutes.
- Serve with rice.
