Pepperoni-Stuffed Chicken Breasts
INGREDIENTS
- 4 chicken breasts
- 12 slices pepperoni
- 1/2 c shredded Mozzarella
- 1/4 c panko
- 1/4 tsp Italian seasoning, mortared
PREPARATION
- Heat oven to 400.
- Line baking sheet with foil.
- Cut pocket into each breast.
- Place 3 pepperoni slices and 2 Tbsp cheese in each breast pocket; press edges to seal.
- Place chicken on cookie sheet.
- Spray chicken with cooking spray.
- Combine panko and Italian seasoning; sprinkle evenly over breasts.
- Bake until chicken is 165 -- about 20-30 minutes.
