Pomegranate and Pear Salad

INGREDIENTS (2 jar salads)

Dressing

  • 5 Tbsp sherry vinegar
  • pinch of salt
  • freshly ground black pepper to taste
  • 6 Tbsp EVOO

Salad

  • 1 pear, cored and thinly sliced
  • 5 oz spinach, divided if making jar salads
  • 1 c pomegranate seeds
  • 1/2 c chopped pecans
  • 4 oz crumbled blue cheese

PREPARATION

Dressing

  1. Whisk together vinegar, salt, and pepper.
  2. Slowly add EVOO, whisking until it thickens.

Dinner Salad

  1. Toss pears, spinach, pomegranate, pecans, and blue cheese.
  2. Serve with dressing.

Jar Salads

  1. Place 1/2 pear slices in each of two mason jars.
  2. Layer 2 c spinach in each jar.
  3. Add 1/2 c pomegranate seeds.
  4. Layer 1/2 c spinach.
  5. Add 1/4 c pecans.
  6. Add 1/2 c spinach
  7. Add blue cheese.
  8. Put 3 Tbsp dressing in cup on top.
