Pork Carnitas (Mexican Pulled Pork)
INGREDIENTS
- 2.5 lbs pork loin
- 6 cloves garlic, slivered
- cumin
- adobo seasoning
- garlic powder
- 3/4 c chicken broth
- 1 chipotle pepper (adobo sauce)
- 2 bay leaves.
PREPARATION
- Season pork with salt and pepper, brown on all sides.
- Remove from heat and allow to cool. Deglaze pan with broth if desired.
- Using a sharp knife, cut little holes and insert garlic slivers into them.
- Season pork with cumin, adobo and garlic powder.
- Pour broth in crockpot. Add bay and chipotle.
- Place pork in crockpot and cover.
- Cook on LOW for 8 hours.
- Remove bay and chipotle.
- Shred pork using two forks.
- Combine well with juices in crock.
- Cook another 30 minutes.
