Pork Noodle Bowl
INGREDIENTS
- 2 pork chops, sliced into bite-sliced strips
- 1/2 c bottled Asian salad dressing
- 4 oz multigran noodles or spaghetti
- 1 package broccoli or coleslaw mix
- 1/4 c sliced almonds, toasted.
PREPARATION
- In small mixing bowl, combine pork with 1/4 c salad dressing.
- Cover and chill at least one hour.
- Cook pasta, drain and return to pot.
- Add remaining 1/4 c dressing to pasta, toss to coat.
- In large nonstick skillet, heat 1 Tbsp EVOO on medium-high.
- Cook pork, half at a time, for 3-4 minutes, stirring.
- Transfer pork to pasta pot; toss to coat.
- Add slaw to hot skillet.
- Cook, stirring, about 3 minutes or until beginning to wilt.
- Add to pasta mixture, tossing to mix well.
- Top with almonds.
