Pork with Spinach and Tomatoes
INGREDIENTS
- 2 Tbsp EVOO
- 4 pork chops
- 2 Tbsp melted butter
- 1/4 c chicken broth
- 3 Tbsp lemon juice
- 1 c grape tomatoes
- 5 oz bag baby spinach
PREPARATION
- Heat oil in mondo skillet on medium-high.
- Add chops and season with salt and pepper.
- Brown on both sides; remove to plate and keep warm.
- Add butter, broth and lemon juice to pan and heat for few minutes.
- Return pork to pan, cover, reduce heat to low and cook 8-10 minutes.
- Remove and keep warm.
- Add tomatoes and spinach and stir through sauce.
- Cook 2-3 minutes until spinach is wilted.
- Serve pork with veggies and sauce from pan.
