Port Chops
INGREDIENTS
- 1 Tbsp butter
- 1 Tbsp EVOO
- 4 pork chops
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 c sweet red wine or port
- 1/2 c chicken broth
- 2 Tbsp ketchup
- 1/8 tsp thyme
PREPARATION
- Heat butter and oil in mondo skillet over medium-high.
- Season chops with salt and 1/8 tsp pepper
- Add to skillet, cook 3-4 minutes/side until 160.
- Remove to platter.
- Add wine to skillet, cook 1 minute, scraping bottom.
- Add broth, ketchup, 1/8 tsp pepper and thyme.
- Cook 3 minutes, stirring occasionally.
- Spoon sauce over chops.
- Serve with rice or mashed potatoes.
