---++ Port Chops ---+++ INGREDIENTS * 1 Tbsp butter * 1 Tbsp EVOO * 4 pork chops * 1/4 tsp salt * 1/4 tsp pepper * 1/4 c sweet red wine or port * 1/2 c chicken broth * 2 Tbsp ketchup * 1/8 tsp thyme ---+++ PREPARATION 1. Heat butter and oil in mondo skillet over medium-high. 1. Season chops with salt and 1/8 tsp pepper 1. Add to skillet, cook 3-4 minutes/side until 160. 1. Remove to platter. 1. Add wine to skillet, cook 1 minute, scraping bottom. 1. Add broth, ketchup, 1/8 tsp pepper and thyme. 1. Cook 3 minutes, stirring occasionally. 1. Spoon sauce over chops. 1.
