Potato Ham-Bone Soup
INGREDIENTS
- 1 rib celery, thinly sliced
- 1 carrot, thinly sliced
- 1/2 onion, sliced
- 1 Tbsp EVOO
- 2.5 lbs yellow potatoes, peeled and cubed
- 1 can chicken broth
- 8 oz cream cheese
- 1 c ham, diced
- 3/4 c + 2 Tbsp shredded Cheddar, divided
PREPARATION
- Add EVOO to Voldepot. Heat on medium and cook celery, onion and carrot until tender.
- Add potatoes and broth.
- Bring to a boil; simmer until potatoes are tender, about 30 minutes
- Add cream cheese and mix until blended.
- Add ham and stir until heated through.
- Mix in 3/4 c cheddar.
- Serve topped with remaining cheddar.
