---++ Potato Ham-Bone Soup ---+++ INGREDIENTS * 1 rib celery, thinly sliced * 1 carrot, thinly sliced * 1/2 onion, sliced * 1 Tbsp EVOO * 2.5 lbs yellow potatoes, peeled and cubed * 1 can chicken broth * 8 oz cream cheese * 1 c ham, diced * 3/4 c + 2 Tbsp shredded Cheddar, divided ---+++ PREPARATION 1. Add EVOO to Voldepot. Heat on medium and cook celery, onion and carrot until tender. 1. Add potatoes and broth. 1. Bring to a boil; simmer until potatoes are tender, about 30 minutes 1. Add cream cheese and mix until blended. 1. Add ham and stir until heated through. 1. Mix in 3/4 c cheddar. 1. Serve topped with remaining cheddar.
