Purple Peas with Ham
INGREDIENTS
- 3 slices diced bacon
- 1 1/2 Tbsp EVOO
- 1 1/2 c chopped onion
- 3 cloves garlic
- 8 oz ham, diced
- 4 c chicken broth
- 4 c purple peas, fresh
- salt and pepper to taste
PREPARATION
- Cook bacon till almost crisp, drain.
- Heat olive oil in large saucepan over medium, add onion and ham and cook, stirring until onion is tender.
- Add garlic, cook 1 minute.
- Add the bacon, broth and peas and bring to a simmer. Reduce heat to low, cover and simmer for 50-60 minutes.
- Uncover and cook 5-50 minutes.
- Salt and pepper to taste.
