Quick French Onion Soup
Ingredients
- 3 Tbsp butter
- 4 LARGE yellow onions, sliced
- 1 Tbsp all purpose flour
- 2 c beef stock (not broth)
- 1 tsp Worcestershire sauce
- 4 sliced French bread
- 4 slices swiss or gruyere cheese
Preparation
- Melt butter, add onions and cook covered 10 minutes, shaking pan frequently to prevent sticking
- Stir in flour till well-mixed.
- Add stock, 2c water and Worcestershire sauce--bring to boil over high
- Reduce heat and simmer, covered till onions are VERY soft -- 10 or so minutes
- Preheat broiler and place bread on sheet. Toast on both sides
- Cover each slice with a cheese slice and broil till cheese is melted.
- Place 1 bread slice in each bowl, ladle in soup.
