---++ Quick French Onion Soup ---+++ Ingredients * 3 Tbsp butter * 4 LARGE yellow onions, sliced * 1 Tbsp all purpose flour * 2 c beef stock (not broth) * 1 tsp Worcestershire sauce * 4 sliced French bread * 4 slices swiss or gruyere cheese ---+++ Preparation 1 Melt butter, add onions and cook covered 10 minutes, shaking pan frequently to prevent sticking 2 Stir in flour till well-mixed. 3 Add stock, 2c water and Worcestershire sauce--bring to boil over high 4 Reduce heat and simmer, covered till onions are VERY soft -- 10 or so minutes 5 Preheat broiler and place bread on sheet. Toast on both sides 6 Cover each slice with a cheese slice and broil till cheese is melted. 7 Place 1 bread slice in each bowl, ladle in soup. -- Main.JMagGuthrie - 23 Dec 2011
